Open Faced Pig’s Ear Pulled Pork Sandwich

Grab some pork and a can of Pig’s Ear Brown Ale and let the Fall times roll!! Put this combo in the crock pot, set and forget. Might as well a crack open a couple cans of Pig’s Ear while you wait…enjoy!!

INGREDIENTS:

  • 3-4lb Pork butt
  • 1 cup chicken stock
  • 1 can Woodstock Inn Brewery Pig’s Ear Brown Ale
  • 4 peeled garlic clove
  • 1 tsp dry mustard
  • 1 medium sized yellow onion
  • 1 tbsp butter
  • 2 shots bourbon of choice
  • Onion bulkie rolls
  • Salt & pepper
  • Cold water & corn starch (to make a roux)

INSTRUCTIONS:

  1. Season pork butt with salt & pepper; once seasoned place in crock pot with the chicken stock, garlic cloves, dry mustard and Pig’s Ear Brown Ale.  Set crock pot on low for 5-6 hours and walk away!
  2. While your pork is cooking in the crock pot, slice the yellow onion and place in a medium frying pan, add butter and salt & pepper to taste.  Once the onions are translucent and soft, add the bourbon and deglaze the pan until all the liquid is gone.  Set the caramelized onions aside until you’re ready to eat.
  3. Make a roux using equal parts corn starch and cold water OR cold Pig’s Ear Brown Ale. (aprox. 2 tbsp of each)
  4. Once time is up on the crock pot, remove the pork and shred with 2 forks.  While the pork is out of the crock pot, add your roux and stir until the liquid starts thickening.  Then, return the pork to the crock pot on low for another 30-45 minutes.
  5. Put pork on open onion roll, smother with pulled pork and gravy, add caramelized onions, top with your choice of cheese and melt under the broiler for 2 minutes (or until melted).
  6. Crack open a cold Pig’s Ear Brown Ale and ENJOY

Thanksgiving Turkey Beer Brine

We talked to Scott about a beer brine for Turkey. He’s a giant fan of brining turkey “because you can impart whatever flavor you would like while keeping the moisture in the bird.” Using beer can add flavor and/or floral characteristics plus it’s great as a tenderizing marinade so he walked us through the process and we’re sharing it with you!!

Below are the ingredients he suggested based on a 6 pound turkey. You can always adapt it based on the size of your bird.

8 cups of water
8 cups of beer (try a malty one like Pig’s Ear Brown Ale or Autumn Brew Ale)
1/2 cup sugar
3/4 cups course salt

A few employees who ‘swear by this’ do it a day ahead of time but you can do it in as few as 6 hours beforehand.

Combine the ingredients in large stock pot or bowl. Stir the sugar and salt until they dissolve. Rinse the turkey, discard excess fat and place in pot with brine, breast side down. If you have a really big bird you’ll have to get creative… maybe use a cleaned cooler? If it won’t fit in your fridge hopefully it’s cold enough outside to store overnight on your porch or in a garage.

Anyway, remove your turkey from the brine an hour or so before roasting. Pat it dry with paper towels and let stand at room temp.

Then stuff and/or cook per usual and bask in the limelight as all your guests freak out over how tender and juicy your turkey is!

Old Man Oatmeal Stout Chocolate Bread Pudding

Beer and food combine with our newest make-at-home recipe. This delicious, chocolate bread pudding is made with Old Man Oatmeal Stout or Kanc Country Maple Porter. Make this for the holidays, close your eyes and it will be like you’re here with us. 😉🍻

INGREDIENTS:

FOR BREAD PUDDING:

1 1/2 Baguettes, chopped in to bite sized pieces
4 eggs
1/2 cup white sugar
2 cups Old Man Stout or Maple Porter (if using Maple Porter, substitute all chocolate, for white chocolate)
1 cup milk
1 cup heavy cream
1 stick melted butter (cooled enough to not scramble the eggs)
1 pack instant hot chocolate (Irish Cream flavor is preferred)
1 cup milk chocolate morsels
1 cup dark chocolate morsels
1/2 cup chopped pecans or walnuts (optional)

FOR SAUCE:

1 cup Old Man Stout or Maple Porter (whichever you are using)
1/2 stick butter
2 tablespoons heavy cream
1 cup dark chocolate morsels

INSTRUCTIONS:

  1. Preheat oven to 325 F.
  2. In a large bowl, mix together eggs, sugar, milk, heavy cream, melted butter and packet of hot chocolate.
  3. Once combined, add in the baguettes.  Let sit in liquid to absorb for 20 minutes.
  4. When the bread is good and soggy, move to an 8×11 baking pan.
  5. Once in the baking pan, add the dark and milk chocolate morsels and nuts.
  6. Bake at 325 for 40 minutes or until firm.

While the pudding is baking, start your sauce.

  1. Bring 1 cup of stout (or porter) to a boil.  Boil until the liquid reduces by half.
  2. Once liquid is reduced, remove from heat.
  3. Whisk in 1/2 stick of butter, heavy cream and dark chocolate morsels until smooth.

Remove the pudding from the oven, scoop some in to a bowl, spoon some of the chocolate beer sauce over the pudding and top off with some whipped cream or vanilla ice cream.  Enjoy!!!!!!

Frosty Goggles Beer Battered Cod and Onion Rings

When the slopes collide with the Atlantic Ocean! Frosty Goggles beer battered cod is sure to make your fish fry top notch! With the light citrus notes in this red hoppy pale ale its a no brainer to use in beer batter. One for the batter, one for the cook!

INGREDIENTS:

  • 1lb cod – cut into 2-3 inch pieces
  • 3-4 large white onions, sliced
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon freshly ground pepper
  • 1 can Frosty Goggles
  • 1/2 teaspoon cayenne pepper


DIRECTIONS:

  1. Combine flour and pepper in a large bowl.
  2. Slowly pour in Frosty Goggles, whisking constantly until smooth.
  3. Dip the fish in the batter, allow excess to drip back into the bowl and drop into the deep-fryer.
  4. Fry for 2 minutes or until dark golden brown, then remove with a slotted spoon and drain on paper towels or newspaper.
  5. Repeat steps 3 & 4 with onions.
  6. Serve with tartar sauce and an ice cold Woodstock Inn Brewery Frosty Goggles!

COVID-19 Update 2/24/2021

Update 2/24/2021:

Dear friends and guests –

We’ve been fortunate to have made it so far in this pandemic and we are beyond grateful for everyone’s support. Unfortunately, a few of our employees have tested positive for COVID. In the spirit of transparency and an abundance of caution, we have made a decision to close for lunch and dinner as of today. We will also be closed for breakfast for a few days.

Beginning today, February 24:

  • the restaurant and bar operations for breakfast, lunch and dinner are suspended.
  • Inn rooms will remain open.

Was I exposed?
We know that given this information some guests may be worried. While a few employees tested positive, in accordance with CDC guidelines, we feel it is very unlikely the public was exposed. None of the waitstaff has tested positive. For the safety of our staff and guests we’ve decided to test all staff working breakfast, lunch, dinner and in the bars as a cautionary measure.

Why will you start back up with Breakfast only?
We will re-open for breakfast with a small crew that has been tested. These employees work entirely for breakfast. Additionally, breakfast is served from a separate kitchen, in a different dining room.

What are your next steps?
Our plan is to close for breakfast, lunch & dinner. All staff will be tested. Then we’ll reopen breakfast in a few days and then reopen lunch and dinner the middle of next week, as long as employees come back negative and it is safe to do so.

In the meantime, we are following CDC and state guidelines and doing a deep clean of the entire facility.

Our employees and guests are our #1 priority and we need to take these steps to ensure everyone’s safety. As we know more, we will continue to update on social media and blog posts.

We apologize for the inconvenience but we know you’ll understand our decision. We continue to be humbled and so appreciative of your support, encouragement, love and prayers as we all continue to navigate these challenging times together.

COVID-19 Update: Breakfast Opens Saturday, 2/27

Update 2/26/2021:

Dear friends and guests –

As you know a few of our employees recently tested positive for COVID and in the spirit of transparency and an abundance of caution, we temporarily suspended food and beverage operations.

Beginning Saturday, February 27:

  • Breakfast re-opens at 7-11:30a
  • the restaurant and bar operations for lunch and dinner are set to re-open Wednesday, March 3rd.

Why are you starting back up with Breakfast only?

Update 3/2/2021:

Dear friends and guests –

We’re excited to announce that we’re ready to re-open tomorrow!!

Wednesday, March 3rd:

  • Full Restaurant & Bar operations will open
  • Brewery tours & outdoor igloos are back. Please call to make a reservation.
  • Live music back March 5-7 

What procedures were taken prior to re-opening?

  • We’ve been working closely with the NH Department of Health and Human Services to make sure we were doing everything right for the safety of guests and staff.
  • While some of our employees are finishing quarantine before returning, the crew coming back to work have had a negative test result.
  • All areas front and back of the house have had a deep clean and sanitization.

We’re blessed to have amazing employees and phenomenal community support.

Pig’s Ear and Double Pig’s Ear Craft Beer

Woodstock Inn Brewery craft beer is brewed in the White Mountains of New Hampshire. This VLOG features tasting notes and information on two of its best known beers, the flagship Pig’s Ear Brown Ale and Double Pig’s Ear Brown Ale.

Highlights
When we think about the taste of Pig’s Ear Brown Ale the following words come to mind…

Pig’s Ear Brown Ale was the first recipe brewed by The Woodstock Inn Brewery back in 1995, the year the family owners made the journey into craft beer.

The Pig’s Ear Double Brown Ale is twice as much alcohol as our Pig’s Ear Brown Ale, weighing in at 8.4% ABV.
This smooth, rich beer is deceptively easy to drink. Similar to Pig’s Ear, the taste is nutty with rich caramel and toffee notes.

Both brews are available at the brewery and sold in package and grocery stores throughout New England including Maine, Massachusetts, New Hampshire, Rhode Island and Vermont. Need help finding our beer? Ask us!

Tour the brewery and try these beers at the source. Tours are Monday – Sunday at 12p. Cost is $9 per person and includes a pint glass and craft beer tasting. Availability is limited to 10 people per tour. Guests must wear masks for tour – except for the tasting.

4000 Footer IPA Craft Beer

Woodstock Inn Brewery has been making beer since 1995. It’s New Hampshire’s second oldest craft brewery and it’s located in North Woodstock.

Watch the second installment of the Brew Minute produced by our friends at New England Ski Journal.

This video stars fan fave employee, Steven Rouse and features tasting notes and information on Woodstock Inn Brewery’s 4000 Footer IPA. The name of this brew is an ode to hikers and the forty-eight, 4000 foot peaks in NH.

4000 Footer IPA (aka 4K) has a clean mouth feel and assertive bitterness. This West Coast style IPA has piney and floral hop notes.  This is the first IPA recipe brewed by Woodstock and has a 6.5 ABV with 82 IBUs. IBU stands for International Bittering Unit. The more bitter the beer, the higher the IBU.

For comparison, Woodstock makes Pig’s Ear Brown Ale, which has 20 IBU’s, while 4K IPA has 82. This gives it the 4K a more bitter taste enjoyed by IPA fans. Different hops and the amount of hops create different alpha acids that equate to the flavor.

Slow Roasted Short Ribs Beer Recipe

At Woodstock Inn Brewery there are two things we love: great beer and great food. Here’s a beer recipe for a perfect dinner. Easy to make and even better to eat. Plus, we’re braising meat in beer, which is never a bad idea!!

We use our roasted, nutty, malty, Double Pig’s Ear Brown Ale in this recipe.

Ingredients:

  • 2 lbs of Boneless short Ribs
  • 1 large shallot
  • 1 medium white onion
  • 3 carrots
  • 3 sprigs of fresh rosemary & thyme
  • 1 cup of diced pancetta
  • 2 cups of beef broth
  • 2 cups of Double Pigs Ear Brown Ale
  • 1/2 cup of all-purpose flower
  • 2-3 tablespoons of evoo
  • Salt & Pepper to taste

Cooking Instructions:

  1. Salt & pepper your short ribs then dredge in flour
  2. Dice your veggies
  3. Dice your pancetta
  4. In your Dutch Oven, cook pancetta until all fat has rendered. Then remove pancetta. Do not discard the grease.
  5. Add 1 tablespoon of evoo to pancetta grease
  6. Turn heat up to high and brown short ribs on all sides. Remove short ribs once browned.
  7. Lower heat to medium
  8. Add diced veggies with 1 tablespoon of evoo, cook until onions are translucent.
  9. Deglaze the pan with veggies left in it with 2 cups of Double Pigs Ear Brown Ale
  10. Bring to boil for 2-3 minutes
  11. Add 2 cups of beef broth
  12. Add Short Ribs into cooking liquid (submerged)
  13. Add cooked pancetta
  14. Add sprigs of whole rosemary & thyme
  15. Add salt & pepper to taste
  16. Put lid on place into oven at 350 for 2 hours. Then reduce heat to 325 and cook for additional 35-45 minutes
  17. Remove from oven let sit with lid on for 20 minutes before serving

Serve Short Ribs over a bed of mashed potato with your choice of vegetable.

Frosty Goggles Seasonal Beer

Kanc Country Maple Porter Sausage Penne

March is Maple Month in New Hampshire. In the spirit of this sweet season, try this Sausage Penne recipe, made with our Kanc Country Maple Porter.

INGREDIENTS

1lb Sausage
1/2 pint grape tomatoes
1/2 bunch of asparagus, cut into 2 inch pieces
1 1/2 lb. penne pasta
1 TBSP garlic, diced
1/2 cup Kanc Country Maple Porter
2 TBSP Butter
1 bunch of scallions, diced
Parmesan cheese

INSTRUCTIONS

  1. Crumble sausage into frying pan until browned.
  2. Add asparagus and after 1-2 minutes, add grape tomatoes and garlic until garlic is cooked.
  3. Deglaze with Maple Porter and add butter until blended.
  4. Toss with cooked penne pasta.
  5. Garnish with scallions and parmesan cheese.

Serves 4.

MORE ON MAPLE MONTH
March is a month-long celebration of NH’s great maple tradition. There are 350+ maple producers in the state and the NH Maple Producers Association encourages people to get out and “support your local sugarhouses and the sugaring tradition.”

We’re “closing up shop” from April 12-May 6 for Spring cleaning & projects. The start of an annual tradition.

  • New whirlpool tubs in O’Toole’s Roost and Ellsworth
  • New fireplace and bathroom in The Ferns Suite

Our employees are amazing!  They’ve worked so hard through this ever-changing climate and adapted to all the changes made to New Hampshire’s Restaurant and Tourism industry throughout the Pandemic.  We want to let them relax until things kick back up again in May. This will be a well-deserved break.

We heart our customers! We say this all the time because we really, really mean it. We’re fortunate to have your support and, seriously, it kept us going through the ups and downs of the past 10 months.

You won’t see us from April 12-May 6 but you’ll still hear from us via blog posts and social media.

Pig’s Ear Pulled Pork Sliders with K&M Root Beer BBQ sauce

Pig’s Ear and pulled pork are a no-brainer. To take it over the top, we used our famous K&M Root Beer to make a zesty sweet BBQ sauce.

We are talking about a MOUTH MASTERPIECE! 

INGREDIENTS

1a. FOR THE PORK
– 1 pork butt or shoulder 3-4 lbs
– 1 can Pig’s Ear Brown Ale
– 2 cups chicken or beef stock
– 1 yellow onion, diced
– 1 tablespoon onion powder
– 1 tablespoon garlic powder
– 1 tablespoon celery salt
– 1 tablespoon paprika
– 1-1/2 cup brown sugar

1b. FOR THE BBQ SAUCE
– 3 cans of K&M Root Beer
– 3/4 apple cider vinegar
– 1/4 cup ketchup
– 1/4 cup yellow mustard
– 1 tablespoon Worcestershire sauce
– 1 tablespoon Tabasco sauce
– 2-3 tablespoons brown sugar (if you like a sweeter sauce, add a little more)
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon liquid smoke

2a. TO MAKE THE PORK
1. Combine spices & brown sugar to make a rub.
2. Rub pork with combination then sear on all sides in a hot frying pan or cast iron skillet.
3. Once the pork is seared on all sides, put pork in a stock pot with diced onion and 1 can of Pig’s Ear.
4. Cook on high until beer is reduced by half, then add stock put heat to med-low and walk away!
5. Let cook for 3-4 hours.
6. Strain liquid and let pork rest for 20 minutes, then begin pulling the pork apart using two forks.

While the pork is cooking you can make your K&M Root Beer BBQ sauce!

2b. TO MAKE THE BBQ SAUCE
1. Add root beer to a medium-sized sauce pan.
2. Boil the root beer over med-high heat until it’s reduced down to 1 cup – this will take about one hour. 
3. Once the root beer is reduced down and nice and thick, add the remaining ingredients and simmer for 20 minutes.
4. Toss your delicious Pig’s Ear pulled pork with the sauce and ENJOY!

Sustainable Brewing: Spent Grain Beer Bread Recipe

“100% of the spent grain gets re-used. Our in-house baker takes 5-10 gallons worth every week, some goes to Beveridge Craft Beer & Soap Company to make our beer soap & lotion and a local farmer drops a trailer off each week that we fill up with the rest,” said brewer Matt Champy.

Here’s where the spent grain beer bread recipe comes in…

Ingredients
– 3/4 cup warm water
– 2 TBSP yeast
– 1/4 cup butter
– 3/4 cup milk
– 1 cup apple juice
– 1/4 cup molasses
– 2 oz. sugar
– 1 TBSP salt
– 1 1/2 cups spent grain
– 1 cup wheat flour
– White flour: 4-5 cups white flour
– 1 egg for egg wash

Instructions
– Put warm water in mixing bowl, sprinkle with yeast and let dissolve.
– In sauce pan melt butter with milk. After butter is melted in the hot milk remove from stove and
add apple juice, molasses, salt and sugar.
– By now, the yeast has started to work, so add butter and milk mixture.
– Add spent grain and wheat flour. Start to mix and add white flour gradually until dough is
workable and does not stick to your hands. Knead dough for several minutes, then let rise to
double its size.
– Knock back to original size.
– Make into 2 loaves, put on a sheet pan lined with parchment paper that is sprinkled with corn
meal. Brush loaves with egg wash and sprinkle with spent grain and let rise. Cook at 325 for
about 45 minutes.

4000 Footer IPA Steak Marinade

After a long day exploring any of the 48, 4000 foot peaks of the Granite State, there’s nothing better then a cold, 4000 Footer IPA and some steak! Kick off the hiking boots, turn on the grill, crack open a brew and fill that belly with a taste of the mountains in every bite!

MARINADE INGREDIENTS:

  • 1 cup Woodstock Inn Brewery 4000 Footer IPA
  • 1/4 cup lime juice
  • 3 cloves garlic; smashed
  • 1 teaspoon oregano
  • 1 teaspoon dried basil
  • 1/2 cup olive oil
  • 1/2 teaspoon salt

DIRECTIONS:

  1. In a large bowl, combine all marinade ingredients until mixed well.
  2. Pour marinade in to an air tight, sealable container (large zip-lock bag works fine).
  3. Place the flank steak in to the marinade and seal tightly.
  4. Refrigerate for 1-3 hours (up to 24 hours), toss on the grill and cook to desired temperature. 

ABOUT THE BEER:

4000 Footer IPA (aka 4K) has a clean mouth feel and assertive bitterness. This West Coast style IPA has piney and floral hop notes.  This is the first IPA recipe brewed by Woodstock and has a 6.5 ABV with 82 IBUs. IBU stands for International Bittering Unit. The more bitter the beer, the higher the IBU.

For comparison, Woodstock makes Pig’s Ear Brown Ale, which has 20 IBU’s, while 4K IPA has 82. This gives the 4K a more bitter taste enjoyed by IPA fans. Different hops and the amount of hops create different alpha acids that equate to the flavor.

You can find 4000 Footer IPA at the brewery and in package and grocery stores throughout New England including Maine, Massachusetts, New Hampshire, Rhode Island and Vermont.

Days like today are what life is really about.

I love spending time outdoors and living in the White Mountains of NH doesn’t disappoint. An endless amount of beautiful outdoor destinations. From 4000 Footers, to waterfalls to fishing or hitting a swimming hole.

I recently did a 4-spot adventure in one day that I’m sharing with you below. I hope to inspire you to make the best of your time in the glorious western White Mountains. If you have any questions or comments, I’d love to hear from you. Carpe diem!

Part 1:
Franconia Ridge Loop- Falling Waters trail to Greenleaf trail and Old Bridal Path in Franconia Notch
This is one of my go to spots because of the waterfalls and the 360 degree views from the ridge. It’s a quick 15 minute drive from the brewery. You can do the whole climb or just hike approximately 45 minutes to an hour up the Falling Waters Trail and just view the waterfalls. If you plan to do the whole Franconia Ridge Loop make sure that you check the weather before you head out! Here is a link to check the forecast for Mt. Lafayette.

This hike has almost 2 miles of above tree line hiking, climbs two 5,000 foot peaks and can be very dangerous in bad weather, it is not recommended for inexperienced hikers.

*This climb is challenging and can take you 6 to 8 hours to complete. Make sure you bring the ten essentials:
Headlamp, Map, Extra clothes, Water, Food, first aid kit, waterproof matches, knife, emergency shelter, (ex. space blanket) and sunscreen.

Part 2:
Lupine fields in Sugar Hill
A 30-minute drive from The Woodstock Inn Brewery through Franconia Notch will bring you to the tiny town of Sugar Hill New Hampshire, every year during the month of June there is a Lupine Festival. The Festival hosts multiple vendors and there are homemade gifts for sale in the center of town on Main Street. Lupines are wildflowers that only grow in specific areas in the White Mountains. Sugar Hill has wonderful views of the surrounding landscape and many places to pull over and view the Lupines. This is an activity you could do with the whole family! Click for more information.

Part 3:
Kayak Coffin Pond in Sugar Hill
A short drive from the Lupine fields in Sugar Hill, you will find Coffin Pond. This pond offers wonderful views of Mt. Lafayette and Cannon Mountain. You can spend your time having a picnic on shore, bird watching, fishing, kayaking or just enjoy the beautiful view. There are no kayak rental shops in this area so you must bring your own. This pond is about 10 minutes from Cannon Mountain where you can take the aerial tram to the 4,080 ft summit. Close by Cannon is also Echo Lake Beach, Artist Bluff and Bald Mountain.

Part 4:
Sunset from Bald Mountain in Franconia
Head up 93 North from the brewery for about 13 minutes and you’re at this scenic spot on Exit 34C. One of the best bang for your buck hikes in the White Mountains. This short hike will give you incredible views of Franconia Notch and is good for sunset from early spring until June-ish. If you’re looking for a fun and rewarding hike for your family, this is your best option. Dogs will love it too! You can continue hiking over the ridge to Artist Bluff to complete the loop and get two different views of the mountains. If you plan to do a sunset hike, make sure you don’t forget your headlamp!

Mosaic Pineapple Kickin’ Chicken

In the dog days of summer, what’s better than a light meal on the deck? Enter Mosaic Pineapple Kickin’ Chicken.

Marinated in our new Mosaic Pineapple Pale Ale, pineapple juice and some spice for some kick. This dish is served with fresh pineapple salsa over coconut jasmine rice and will surely become a new summer favorite!

Yields 4-6 servings
Cost:
$30 including beer

Ingredients:

For Chicken marinade:

  • 2lbs boneless, skinless chicken thighs
  • 1/2 can pineapple tidbits
  • Juice from 1 can of pineapple tidbits
  • 1/2 can Woodstock Mosaic Pineapple Pale Ale
  • 1 teaspoon crushed red pepper
  • 1 tablespoon Jamaican jerk seasoning

For Salsa:

  • 1/2 can pineapple tidbits (or pineapple rings, chopped)
  • 2 medium sized jalapenos, finely diced with ribs and seeds removed
  • 1 medium tomato, diced with seeds removed
  • 2 tablespoons cilantro, chopped
  • 2-3 tablespoons pineapple juice

For Rice:

  • 1-1/2 cups unsweetened coconut milk (shake can VERY well before using)
  • 2 cups chicken stock
  • 2 teaspoons light brown sugar
  • 1 teaspoon salt
  • 2 cups Jasmine rice, well rinsed and drained

Instructions:

  1. Add chicken thighs to a large resealable plastic bag. Add all other marinade ingredients to the bag with chicken. Seal the bag and place in the refrigerator for at least 3 hours, up to 24 hours.

  2. In a small mixing bowl, add salsa ingredients and stir until well combined.  Set aside while you cook the chicken and rice.

  3. For the rice, combine the chicken stock, coconut milk, brown sugar and salt in a large sauce pan. Bring to a simmer, then stir in the rice.

    • Return to a gentle boil, cover and reduce heat and simmer for 15 minutes.

    • Remove from heat and let stand for 10 minutes, remove lid and fluff gently with a fork.

  4. While rice is cooking, start grill and set to med-high heat – spray grill with non-stick cooking spray.  Once grill is hot, put the chicken on and cook for 4-5 minutes per side, until slightly charred and cooked through.

  5. Let chicken rest for 5-10 minutes.

Serve chicken over coconut rice, top with the pineapple salsa and pair with a cold Woodstock Inn Brewery Mosaic Pineapple Pale Ale.  Cheers!!

Family Fun Adventures in the White Mountains

You’re up in the White Mountains of New Hampshire, having a great time with your family. You’ve finished your visit to Whale’s Tale Waterpark. Everyone swam in the wave pool, flew down the slides and of course calmly floated down the Lazy River. Next comes that moment of transition: that moment when you need to leave. The kids are tugging on your pants, demanding to know where they’re going next. The little one is about to have an atomic melt down because she just does not want to leave. Her tears are starting to bubble up but before you lose it and get frustrated, remember that the Woodstock/Lincoln area has awesome kid’s activities to help wind down an evening.

If you have little adventure lovers, check out the Lincoln Woods trail. It’s located just outside Lincoln, down the Kancamangaus Highway, about 10-15 minutes out of town, past Loon Mountain. It’s flat and easily accessible for the whole family with a huge parking lot. This trail runs right along the Pemigewasset River with plenty of great river views. Also, kids LOVE the suspension bridge – the quasi-famous, huge suspension bridge that welcomes you to the forest to begin your journey.

If your kids have more of an artistic side, you’ll want to hit up Fired on the Mountain. It’s our local paint-your- own-pottery studio.

If your family happens to be “pedal powered,” there are a few different places in town that rent bikes. I’d recommend checking out Rodgers Ski and Sport, as their shop is located right off the highway and they have a great selection of bikes. Your entire family can rent bikes and just pedal around town or get a shuttle ride to the top of Franconia Notch and ride our amazing bike path. It’s an 8-mile paved bike path that winds between mountains, lakes and scenic vistas. Be sure to bring snacks and plenty of water – we all know what a trip is like without snacks.

Make your vacation to the Whites “melt down free” by exploring friendly local businesses that welcome your whole family. Plan accordingly and let the kids explore as much as possible.

Also, many attractions in the White Mountains have reservation policies and some are only open specific hours. The best place for all this information is the White Mountains website.
